Thin Chewy Cookies

I hate crunchy cookies. Its a pet hate of mine when you buy some and they are all stale and hard. Yuck! No thanks!

I've been on the search for a great chewy cookie recipe. One that makes nice soft thick cookies with a chewy gooey center. So obviously I've taken my search to pinterest *like we didn't see that coming* and have found some recipes I'm going to try.

I decided I'd share the recipes with you guys in-case you too are looking for your perfect cookie recipe :)

So he's the first one i tried.

You'll need
300g plain flour
1 teaspoon bicarbonate of soda
Pinch of salt
225g unsalted butter, softened
150g caster sugar
150g light brown sugar
2 teaspoons vanilla extract
2 large eggs

How to make
Pre-heat the oven to 180C and mix together the flour, bicarb and salt in a bowl.

In a separate bowl, cream together both the sugars and the butter till its blended and add the vanilla.

Add in an egg at a time and mix well, ensuring its all combined.

Next you need to gradually add in the flour, a little at a time, and fold it in till it makes a dough.

*The recipe did say to add chocolate chips at this point but in order to fairly judge taste, i decided to omit the chocolate and make plain ones. There is nothing to stop you adding chocolate chips. You'll need 200g of them.*

Line a baking tray with grease proof paper and place generous blobs of the cookie dough on the tray. They do spread out so try and leave some space between them.

Cook for 9 minutes for nice gooey cookies (or a bit longer if you like a crunch).

Take them out the oven and allow to cool slightly before putting on a wire rack to cook completely.

These cookies are delicious and they are nice and soft but no matter how high i piled the dough, they still came out really thin. That suited Agent D though as he likes his cookies like that.

I however am still on the search the holy grail of cookies :)
